I make an amazing guacamole with roasted corn and lots of lime. My family was craving it, so I went to three different stores trying to find ripe avocados, no luck. I returned home with 4 rock-hard avocados and the uncertainty of when I would actually be able to make my guac. After 4 days, they were still hard and my tomatoes destined for the guacamole were mushy. I made it my mission to figure out how to ripen my expensive avocadoes so that I could move forward with my life and make a special treat to enjoy while watching Christmas movies!

Here is how to ripen an avocado in minutes:

  • heat your oven to 200 degrees
  • wrap your avocado in foil
  • put it in the oven, on a baking sheet
  • check your avocado after 10 minutes, harder ones may take longer
  • allow it to cool in the fridge before handling it

Here's my recipe for roasted corn guacamole. It's not the smooth stuff they serve at Chipotle. it's chunky and full of texture and flavor. it's more of a combo of salsa and guac.

Here's what you need for Celeste's Roasted Corn Guacamole:

  • 4 ripe avocados, pitted and rough chopped
  • 1/8 cup of finely chopped red onion
  • a handful of chopped fresh cilantro
  • 1 bag of frozen corn
  • 3 plum tomatoes, gutted and chopped
  • fresh lime juice and salt adjusted to your taste
  • 1 diced jalapeno pepper, ribs and seeds removed

Heat a non-stick pan on medium high heat and give it a blast of cooking spray. I don't recommend using oil to roast the corn, I think it gives it a funky flavor that is unwelcome in this recipe. Learn from my mistake. K, now add the corn to the pan with some kosher salt and cook it until it starts to brown a bit and it's natural sugars are caramelizing. Take the corn off the heat and put it aside to cool. Use a fork to give a quick mash to the avocado, add in the rest of the ingredients and season it with lime juice and salt.
