Doesn't this Chicken Parmesan look yummy? Warm, home made and deeply satisfying? It smells so delicious baking in the oven and seems to melt away sore shoveling muscles with every cheesy bite! This is my family's go-to meal on  days when cooking from scratch is out of the question. It looks labor intensive right? I'm sure it was for the crew at Di Pietro's on Cottage Rd. in South Portland when they put it together! Here's what it looked like 40 minutes before it hit the oven...

Yup, it's the best kind of take out! Even the sauce is home made, and my family loves it so much that we always order an extra quart. Let's face it, I'm not doing all of the dishes created by making home made Chicken Parm! 'Aint nobody got time for that! This dish is so convincing that I serve it to company. I would attempt to pass it off as my own, but at the first compliment one of my kids pipes up with,"We get it at Di Pietro's all the time!"

Here's the recipe:

Heat the oven to  350 degrees. Pour some sauce on the bottom of a lasagna pan, arrange the chicken on top, redistributing any cheese that has shifted during transport. Bake until cheese is melted and the sauce is bubbling on the sides of the pan, or until you cant wait anymore because it smells so good! It's all pre-cooked so you're just warming it through anyway. We like it over thin spaghetti with some salad.
