The History of Mexican Food in the United States

According to an article posted on the Ohio State University website, Tex-Mex cuisine grew from authentic Mexican and Spanish roots, later shaped for American audiences through storytelling and commercialization.

In the late 1800s, William Gebhardt helped popularize chili by producing and distributing chili powder nationwide, while companies expanded access through recipes and canned foods.

Events like the World’s Columbian Exposition introduced chili to broader audiences. Street vendors known as the Chili Queens also played a key role. Over time, brands and chains like Taco Bell turned dishes like tacos into global staples, cementing Tex-Mex as a lasting part of American food culture.
