Waterville, Maine, Could Soon Welcome a New Food Truck Park
It was just a few years ago that when someone mentioned food trucks, our thoughts immediately went to chicken tenders and fries.
These days, food trucks serve up nearly every kind of food imaginable. Some are five-star, Michelin-rated kitchens on wheels. These food trucks serve up fall-off-the-bone ribs, bao buns, lo mein, chicken wraps, carne spit, tacos, burgers, fries, onion rings, and yes, chicken tenders.
Yes, you can get nearly any kind of food from a food truck these days.
Here in Maine, food trucks started gaining popularity in the early 2010s, but because they allow for social distancing, they really took off during the pandemic.
Now that we have several hundred food trucks operating in the state, it only makes sense that food truck parks would start popping up. These places are designated areas where food trucks park to do business. Basically, they operate as food courts for food trucks.
Waterville’s Proposed Food Truck Park
According to an article on the KJ website, Waterville could soon have its own food truck park.
The article explains that Zhanpo Lu and Linjie Gu are hoping to get approval from Waterville’s city council to use a vacant lot on Kennedy Memorial Drive as a food truck park. The couple hopes to open Popo’s Food Truck Court (named after Zhanpo) at 121 Kennedy Memorial Drive.
If they get approval, they’ll be serving traditional Chinese food out of their food truck, and will have space for ten additional food trucks.
The food truck park is scheduled to go before the Waterville Planning Board for preliminary review on June 25. It could get final approval as soon as July. Development of the lot can begin once final approval is given.
The plan is for the food truck park to include a parking lot, tables & chairs, tents, and a playground for the kids.
The hope is that the park could open as early as September.
