In a city that feels like it has more restaurants than people, there's a growing trend amongst new establishments in Portland that are serving some of the same things as others. You've got to up the ante. Which is why it's worth keeping an eye on a new restaurant believed to be heading into the vacant space at 139 Riverside Street, they seem eager to take things up a notch.

Shared on Instagram by Stacks Pancake Co, their feed has only one picture but it's a doozy. In fact, we're not even sure what to call the dish staring at you in the face except the kind of dish you'd expect to find at Willy Wonka's factory. Ice cream on top of waffles on top of ice cream with some whipped cream and chocolate mixed in.

But that's all we've got to go on so far when it comes to this mystery place. With a name like Stacks Pancake Co., you'll have to assume they'll be serving up stacks of pancakes, waffles and other breakfast foods. After all, the vacant space they're presumably moving into has been home to several different brunch restaurants including the Egg and I and First Light. It was also once home to a Friendly's location as well.

So when will it open? What other wild and incredible concoctions will be on the menu? Time will tell. In the comments section of their Instagram post, they promise to announce a grand opening date soon. Bring on the pancakes.
