With our Pats, we're taking it one weekend at a time, right? Food-wise, come game time you wanna have your munchies all ready to go and these are super quick/easy to do, guaranteed to please, with minimal clean-up. (We're big on the minimal clean-up part.)

Cheesy Corn Bites:

Makes about 4 dozen, prep time 10 min., cook for 20. I know that "4 doz." might sound like a lot, but these are going to disappear wicked fast. Tip: While you probably already have frozen corn in your freezer, last week we decided to do these up with freshly shucked corn since this is really the best time of year for it and what a sweet difference it made for sure!

8 ounces cream cheese (at room temperature), 1 cup shredded pepper jack cheese (we like to grate our own for a fresher zip), 1 large egg, 1/2 cup frozen or fresh corn kernels, 48 scoop-shaped tortilla chips (one 10 ounce bag), chopped fresh chives or cilantro for sprinkling on top

Preheat oven to 350. In a large bowl, mix the cream cheese, pepper jack cheese, egg and corn (it's a bit of work but hang in there, it's soooo worth it). Arrange the chips on a large rimmed baking sheet and put a good dollop of the corn mixture in each.

Bake until the filling sets, about 20 minutes. Sprinkle the corn bites with your choice of freshly chopped herbs (we do about two-thirds with chives, the other third with cilantro).

Gotta serve 'em warm. Hand to God, we do these every other game all season long!
