If you’re gluten free and have a serious sweet tooth, you know the feeling. Sometimes it feels like everyone else gets the fun desserts while we’re left searching for the one safe option on the menu. And honestly? Sometimes what we’re craving isn’t just ice cream. We want the cookie dough-loaded, over-the-top, piled-high treats that everyone else gets excited about too.

The Maine Scoop Co. in Scarborough has a gluten free creation called the Scarborough Stackah, and it is basically the dessert dreams of every gluten free person rolled into one giant cup. Picture layers of creamy ice cream packed with chunks of gluten free cookie dough from top to bottom, then topped with a mountain of soft serve, more cookie dough, and a sprinkle of cookie crumbles. Every spoonful looks like it has a little bit of everything.

And that’s what makes it so exciting. It doesn’t feel like the “gluten free version” of a treat. It feels like the real deal. The kind of dessert that makes people stop and ask, “Wait, where did you get that?”

As someone who is always chasing those nostalgic flavors we miss out on, seeing a place put this much effort into a gluten free option makes me ridiculously happy. Cookie dough ice cream is one of those classic cravings, and finding a version that feels indulgent, fun, and fully gluten free is not something I take for granted.
