And what's fantastic is that it feels like there's so much variety. It's not just a bunch of seafood restaurants opening up and doing the same thing.

In fact, April alone has brought new restaurants featuring Asian fusion, French-inspired dishes, Indian cuisine, Mexican food, and even elevated comfort food. And that’s not even counting the new cafe and cocktail bar.

Makoto in South Portland has opened in the former Elsmere BBQ, while Elizabeth has taken over the former Jefe Juan's in Portland. Then there's Taco Rico in Augusta, which is in the former Two Maine Guys location, and Taste Me in Scarborough, which is in the former Terra Cotta Pasta Co on Route 1.

And that's all part of the constantly changing landscape of food in Maine, seeing familar places becomes something new.
