Food trucks have changed so much over the last 10 years. It's a much more competitive playing field. To stay competitive, you have to be different, and having a farm-to-table food truck is pretty darn different.

I've been into food trucks before they were the 'it' place for food, and before the pandemic made them essential to eating out. I've sampled pretty much everything off of four wheels, but this food truck was amazing. It's the kind of food truck that if they ever became brick and mortar, they'd be packed nightly. Terra Firma is new to the scene of food trucks, having only been around for about a year.

I found them at Bloomer's Ice Cream in Parsonsfield recently. I saw 'farm to table' and 'sustainable organic farming' and thought,

On a food truck?

Yup. And what's even better is that it's a father-son operation. The truck comes from a 65-acre organic farm in Acton owned by Dane Giallongo (the son) and John Flood (partner).

On this farm, Dane raised the lamb and chicken that are on the menu! Dad (Scott Giallongo) was cooking, and both had no desire to have their picture taken. But they were totally fine with me taking a picture of the lamb smashburger and fries I ordered.

The burger had a fresh homemade tzatziki that I wanted more of. But it didn't need it. The lamb burger was so delicious, and yes, you can taste the difference between fresh and organic meat and the stuff you buy at the store in bulk. The fries...oh, those fries. They had a rosemary seasoning and parmesan cheese sprinkled on top. I devoured them. And I'm not even a big fan of rosemary, but it wasn't overpowering. It was perfect.

I saw the kebabs and thought, "that's what I'm getting when I find these guys again!" I want to try everything on the menu.
