Get Your Hands On Those Cans-Of Pumpkin! [RECIPE]
Turns out that pumpkins don't like to get their feet wet. This is bad because the "Pumpkin Capital of the World", Illinois, had the wettest June on record. Pumpkin lovers, start your engines! Don't wait until the last minute to get your canned pumpkin! Illinois got a beat-down of a soaking and that's cut production of the canned gourd down by a third. Crops were devastated. BTW, our Halloween pumpkins are the ornamental kind so don't be fooled by how many you've seen. A spokeswoman for Libby's, the largest canned pumpkin manufacturer in the country, says that it would be wise to buy your canned pumpkin right now. If you don't believe this is serious business, than let's time travel back to 2009, when we had another heavy rainfall and the last cans of pumpkin were being auctioned off online!
I stocked up on canned pumpkin because Mark's cousin, Tanya, makes these amazing Pumpkin Bars! The holidays wouldn't be the same without them. She is a sweetheart and graciously shared her recipe with me.
