Watching the Patriots play Monday Night Football games was always a bit of a slog even in the best of times, but heading into tonight's match-up we figure we're going to need some kind of cake snack, some sweetness to off-set the grim proceedings, and then there's one of our favorite Bacardi concoctions just in case. Take your pick, it could be one of those nights. With the Jets. Ugh....

 

Chocolate-Cherry Rum Float: (Recipe courtesy of Geoffrey Zakarian)

This takes about 35 minutes, including freezing-time for the glasses; makes 4 floats.

You will need: 6 ounces dark rum, 1 pint cherry-chocolate ice cream, two 12-ounce bottles of vanilla cream soda

Place your glasses in the freezer to chill. After they're good 'n' frosty (about 30 min.), place 1 1/2 ounces of rum in each chilled glass, followed by two scoops of the ice cream. Top with cream soda; serve immediately. Mmmm, mmm, mmm...

 

Dump Cake: (Recipe courtesy of an old, faded ripped piece of mimeograph paper -- remember mimeographs? -- that's got 'Kids In the Kitchen' as the headline)

This recipe reads like a mistake, but it's sensational.

You will need: 20-ounce can crushed pineapple, 16-ounce can cherry pie filling, Yellow cake mix, 3/4 cup butter

Butter a 9-by-13 inch baking pan. Dump in the crushed pineapple (including the juice!) and spread evenly. Spoon the cherry pie filling over the pineapple. Sprinkle the yellow cake mix over the fruit. Thinly slice up the butter and place the pieces on top of the cake mix. Bake at 350 for 45 minutes. Mmmm. mmm, mmm...

This cake will come in very handy at the start of the second half.
